So the thing that worked was simply unplugging the HDMI cable and plugging it back in, I have to do this after every reboot, it's a bit annoying but manageable.

I use elementary OS freya and there is a GUI app for powermanagement. Remove all instances of sleep, suspend and hibernate. You can leave turn the display off. That disables automatical suspend, but will leave the manual suspend up in the menu in the right upper corner. Mbr Patte

The Mac Mini 1.1 was a Core duo, not a Core 2 Duo, and 32-bit only. It might work with a 32 bit version, but I'm guessing that the slight difference in the architecture might be the problem. HiDPI displays (like the one in your retina Macbook) aren't yet supported by elementary OS. You won't have a good time trying to install on this hardware. As you've noticed, the installer especially doesn't really behave properly here.
